BBQ Garlic Prawn Skewer Recipe

Don’t stress if you don’t have skewers for this recipe, you can put them straight on the grill; the skewer just prevents the prawns from curling up and makes them easier to handle.

If you're using bamboo skewers make sure you soak them in water for atleast an hour or so before so they don't burn up as soon as they hit the grill.

 

 

12 large tiger prawns

2 cloves garlic, chopped

1 cm piece of ginger, grated

1 red chilli, sliced

1 green chilli, sliced

2 tbsp olive oil

1 lemon, zest and juice

Fresh coriander, to garnish

 

Preheat BBQ over medium flame.

 

Combine garlic, ginger, chilli, olive oil and ½ of the zest in a bowl and set a couple of tbsp aside in a small bowl to serve.

 

Place the prawns on the marinade and marinate for 10 to 15 mins.

 

Insert a metal skewer from prawn’s top to tail and place on the grill. Cook for 2 mins, flip, and cook for 2 more mins. Once the prawns change colour they’re done.

 

Serve with lemon wedges and the extra marinade for a fresh zing.
